As the days go by, I continue to sample different cuts of the beef I bought from Bandera Grassland. I had been told that the texture of grass-fed meat might not be to my taste, but I find it perfectly wonderful. The meat has flavor, and when I had some beef from the store at a friend's house the other day I found that it had no taste. So far I have eaten some of my hamburger, NY strip, ribeye, and round steak without any kind of disappointment.

I have one-eighth of a carcass that just came available due to a canceled order. The beef is ready to pick up from the processor today. I plan to make a beef delivery to the Helotes area around noon today, Good Friday, April 22, 2011. If anyone in the area wants this order, please let me know this morning so I can bring it with me.
